Parsons Taxidermy has added Wild Game Processing to cut and package your
game meat. Our sausage kitchen has fully automated smoking capabilities to
produce smoked sausage, like summer sausage, salami, snack sticks and
polish sausage.

We can also
make fresh sausages like breakfast sausage, bratwurst, Italian sausage and
Chorizo. At Parsons we are deer hunters and we know what deer hunters want
from their deer processor. The entire carcass is meticulously boned and
trimmed of all fat to eliminate the wild taste so often associated with
venison. We process one animal at a time so the meat you bring in is the
